Raw Hedgehog Slice


  • 3/4 cup melted coconut oil
  • 3/4 cup raw cacao powder
  • 1/3 cup of maple or agave syrup
  • 1 tsp. Vanilla extract
  • 2 tbsp. mesquite powder
  • 2 tbsp. chia seeds
  • 1 cup sunflower seed
  • 1 cup walnuts
  • 1 cup goji Berries
  • 1 cup dried pineapple pieces
  • 5 drops of pure Orange essential oil


Ganache Topping

  • 1/4 cup of melted cacao butter
  • 1/3 cup raw cacao powder
  • 1/4 cup of maple or agave syrup
  • Cacao nibs to garnish



  1. Gently melt the coconut oil either in microwave, on the stovetop.
  2. Stir the cocoa, syrup, vanilla extract into the melted coconut oil.
  3. Place this combined mixture and the rest of the slice ingredients into a food processor. Pulse a couple of times to combine being careful not to over mix and lose the nice chunky texture of your fruits/nuts.
  4. Line a small tray (about 20cm square) with a bit of coconut oil and baking paper (or cling wrap if you have none) and gently press the in the mixture evenly.
  5. Refrigerate  for 15 minutes while you make the ganache.


Ganache Topping

  1. Combine cacao butter, cacao and syrup in microwave or over double boiler until melted and whisk until smooth. Cool slightly.
  2. Pour out evenly on top of the slice, sprinkle with the cacao nibs and store in the fridge until ready to serve.
  3. When cold, run a knife around the edges of the slice to make it easier to remove and then  lift the slice out by the edges of the baking paper or by inverting and knocking out.
  4. Cut into Squares or bars.
